Villa Frantzén

Concept

Opened in 2022 by the Frantzén Group, this establishment brings Nordic culinary traditions into dialogue with Asian ingredients and techniques. The 400-square-meter villa houses an open kitchen at its center, three private dining rooms, and a dedicated Nordic cocktail bar.

Design

Swedish interior architects Joyn Studio created spaces that merge Scandinavian design principles with tropical context. Key features include:

• Custom-designed lighting mimicking candlelight
• Display of preservation techniques through visible pickle and fermentation stations
• Handcrafted Scandinavian tableware and decorative elements

Culinary Approach

The restaurant's six-course format allows diners to select dishes within each course category. Notable preparations include:

• Grilled scallops with Japanese dashi marinade
• Cauliflower chawanmushi with yeasted mushroom tea
• Baked turbot with grilled heart of palm
