Have you ever tried Chebakia?
A true culinary monument, it's also known as m'kharqa. Its distinctive ear-like shape makes it easily recognizable. The dough comprises flour, eggs, orange blossom water, vinegar, almonds, gum arabic, green anise, cinnamon, sesame, saffron, olive oil, and salt.
The dough is cut into rectangles, and four slits are made with a pastry wheel, creating five strips that are intricately interwoven to achieve the desired shape. It's then fried in oil, dipped in honey, and finally rolled in sesame seeds. Of course, the ingredients and preparation secrets vary by region.
Typically enjoyed during the sacred month alongside harira, a traditional Ramadan soup, Chebakia is one of Morocco's most beloved cakes.
Wandering through the medina alleys, the aromas of this Moroccan pastry fill the air. At every street corner, trays of this famous cake beckon! It's mouthwatering just talking about it!
